Vegetarian fat burning meal: Nasi Goreng with cauliflower rice


This mouthwatering vegetarian Nasi Goreng with cauliflower rice dish is perfect for Phase 2 of Body Slimming Detox. INGREDIENTS


  • 125g cauliflower rice (see below for instructions)


  • ½ long red chillies - chopped finely


  • ½ cup coriander - chopped finely


  • 1/3 red onion  - chopped finely


  • 1 teaspoon of curry powder


  • 2 eggs

METHOD

You can make your own cauliflower rice by putting cauliflower in a food processor and pulsing until it resembles a rice like consistency.  Alternatively if you are time poor, like I usually am, you can buy it at most supermarkets.


To pre-cook the cauliflower rice for this recipe put the chopped onion and chilli in a non stick frypan on a medium heat, dry fry until you can smell the onion and chilli releasing their flavour, stirring regularly for around 3 minutes. Turn heat up slightly and add coriander and cauliflower rice, a pinch of salt and the curry powder.  Stir well until all ingredients are combined and you can smell curry powder aroma.  Stir for around 2 minutes.  Then add ½ cup water and stir through. Allow water to be absorbed which will take a minute or two.


In a non stick frypan, pre heat to a medium heat. Cook two eggs and then drape them over the top of the cauliflower rice.  Season with salt and pepper and ENJOY !
