This plant-based Tikka Masala makes the perfect winter meal for a ‘meat-free Monday’ or any occasion when you are looking for a vegetarian and vegan suitable dish. Tofu makes an excellent high-protein meat substitute here and is the perfect vessel to really soak up the rich flavours of our Slim By Nature Durban Curry Blend. Our signature curry blend is a warming mix of classic spices, including turmeric, chilli, cumin, ginger and coriander. We have suggested to serve this hearty curry with a side of brown rice, a high-fibre wholegrain which is a more nutritious alternative to regular white rice.

Warming Vegan Tikka Masala

Ingredients

  • 1 tbsp extra virgin olive oil
  • 300g firm tofu, cut into 2cm cubes
  • 1 brown onion, finely diced
  • 2 cloves garlic, crushed
  • 3cm piece ginger, finely grated
  • 1.5 tbsp Slim By Nature Durban Curry Blend
  • 1 400g can diced tomatoes
  • ½ cup water
  • 2 cups cauliflower florets
  • 1 400g can chickpeas, drained
  • 1 cup light coconut milk
  • ½ cup cashew nuts
  • Fresh coriander and cooked brown rice, to serve (if desired)

Method

1. Heat oil in a medium frypan over moderate heat. Add the tofu and stir lightly to brown. Remove tofu from pan and set aside.

2. Add onion, garlic and ginger to the pan. Cook for 3 minutes or until onion has softened slightly. Add the SBN Durban Curry Blend to the pan and fry off for 2 minutes.

3. Add the canned tomatoes, water, cauliflower and chickpeas and reduce heat to low. Simmer, covered for 30 minutes, or until sauce has thickened.

4. Pour in coconut milk and tofu and stir through, cooking for a further 5 minutes.

5. To serve, top with cashew pieces and serve with fresh coriander, chilli and brown rice, if desired.

Looking for a lower carb option?

Omit the cauliflower from the curry and finely grate it instead, to make ‘cauliflower rice.’ This then makes a great, lower-carb alternative to the brown rice.
