Apple & Raspberry Crumble

Soft seasonal fruits topped with a crisp, crunchy crumble makes for the perfect winter-warming dessert! Using rolled oats and wholemeal flour along with plenty of seasonal fruit helps to boost the total fibre content of the dish. Raspberries are a rich source of antioxidants and using frozen berries helps to keep the cost down. Coconut sugar is not as refined as other baking sugars on the market and does contain a trace amount of nutrients. It can be found in the baking aisle of most grocery stores, however can easily be replaced by raw sugar or brown sugar.

Apple & Raspberry Crumble

Ingredients

  • 5 medium granny smith apples, peeled, sliced
  • ¼ cup coconut sugar
  • 1 tsp ground cinnamon
  • 2 tbsp butter, melted
  • 1 cup rolled oats
  • ¼ cup wholemeal SR flour
  • 1.5 cups frozen raspberries
  • Thick Greek yoghurt to serve, if desired

Method

1. Preheat oven to 180°C/160°C fan-forced. Grease a 1.5 litre (6 cup) baking dish.

2. Place sliced apples in the bottom of the baking dish, sprinkle over one tablespoon of the coconut sugar and half the cinnamon. Toss to coat. Cover dish and place in the oven for 20 minutes.

3. Meanwhile, prepare the crumble by combining the butter, remaining coconut sugar and remaining cinnamon in a medium mixing bowl. Add rolled oats, flour and cinnamon and mix well. The mixture should look quite crumbly and only just come together.

4. Remove baking dish from the oven and scatter the frozen raspberries over the apples. Sprinkle crumble mixture over the top and smooth to cover. Bake for 20 minutes. Allow to cool before serving. Serve with Greek yoghurt, if desired.

Substitute the butter for nuttelex and swap the Greek yoghurt for coconut yoghurt.
